Sip & Snack - Monkey Mimosa & Vanilla Scented Waffles

When it comes to breakfast,  I have to admit my husband and I usually keep it simple and opt for our typical toast with coffee or tea. This is really due to a lack of ambition on my part in the AM. The kicker is that I am really only punishing myself since I am a HUGE breakfast fan and would eat a big breakfast every single day if I had someone preparing it for me. Even as a kid I fondly remember when my mom would serve breakfast for dinner and we would have tons of waffles and bacon until we were in a  blissful food coma. Returning from a long weekend home on Shelter Island I was inspired to recreate a childhood favorite. It all came together pretty easily thanks a stop at our favorite berry farm stand for some fresh blueberries on the North Fork of Long Island and a quick trip to Crate & Barrel. I spotted this waffle dipper's pan and quickly knew it had to be mine and when it came to a coordinating morning cocktail, is there anything better then a mimosa??? Well this mimosa is a fun spin on the original with an unexpected banana flavor combined with a dash of citrus. I used this mix for the waffles and this recipe for the blueberry syrup. It was such a fun treat for a weekend breakfast!


3 oz champagne or prosecco
1 oz freshly squeezed orange juice
1 oz banana liquor
banana slice for garnish
